India Tree Dark Muscovado Sugar is milled on the island of Mauritius off the coast of Africa and retains much of the flavor typical of the cane which grows there on volcanic ash.  This India Tree Dark Muscovado Sugar has a fine, moist texture, a high molasses content, and a strong lingering flavor that goes well with other rich flavors - as in gingerbread, coffee, chocolate cakes, and fudge.  

Once open, store in an airtight jar or canister.  If sugar hardens, cover mouth of container with a wet cloth or add a piece of apple or a leaf of lettuce to the jar until sugar softens.
